These cookies are delicious and healthy. They are not crunchy like a regular wheat cookie, but they are a lot healthier. Although I eat Paleo I love to have a cookie now and then, and these are great for those moments. And the chocolate on top makes them even more delicious.

Paleo coconut and almond cookies ingredients
- 2 cups shredded coconut
- 2 tablespoons coconut flour
- 3/4 cup almond flower
- ¼ cup melted coconut oil
- 2 eggs
- 1 tablespoon vanilla extract
- 2 tablespoons maple syrup
- a few pieces of 85% cacao chocolate
How to make Paleo coconut and almond cookies
Preheat your oven to 320 degrees Fahrenheit. Mix all the ingredients in a bowl. Make balls of the dough and press them flat until you get circles that are 1/5 of an inch thick. Place them on a baking sheet lined with grease proof paper.
Bake the cookies in the oven for 15 minutes. Let them cool.
Melt the chocolate au-bain-marie. Take a spoon and let the chocolate fall off your spoon while you move it back and forth. This will create nice stripes on your cookies. Let the chocolate set before you eat them.
