I found this cool piece of baking equipment at the store. It creates a perfect hole in the center of a baked cupcake for filling with icing. It’s called a cupcake corer. Of course I needed to try how it worked so I made these chocolate muffins with cream cheese filling. I loved it! It’s so easy and it makes the muffins a lot more special.

What you need for chocolate muffins with cream cheese filling

For the chocolate muffins
– 200 grams of softened butter
– 200 grams of flour
– 200 grams of caster sugar
– 4 large eggs
– 1 teaspoon of vanilla sugar
– 1/2 teaspoon of salt
– 50 grams of Dutch processed cacao
– 70 grams of chocolate chips

For the cream cheese filling
– 200 grams of cream cheese
– 150 grams of powdered sugar
– 50 grams of softened butter

How to make chocolate muffins with cream cheese filling

Preheat your oven at 180 degrees Celsius.Mix the butter, the sugar and the vanilla in a bowl until it’s creamy. Add the eggs one by one. Add the flour, the salt and the cacao and mix well. Put the chocolate chips in the mix and stir. This mix should be enough for 12 til 18 muffins depending on the size. Put the mix into muffin tins lined with cupcake liners. Bake for 20 minutes. Let them cool. Make in the meantime the cream cheese filling. Just mix all the ingredients and put them in a pastry bag. Use the cupcake corer to make a hole in the center of the muffins.
