I had a real struggle with paleo pancakes. I just couldn’t get them right. I tried the 3 ingredient pancake with banana but it was to much banana for me. I also tried some recipes that just didn’t hold together. What I wanted was a pancake that tasted like a regular pancake, at least close to that. So I tried, and I tried… And finally came up with this recipe. And I promise: these are delicious!

Paleo American pancakes ingredients

 

  • 3/4 cup coconut flour
  • 3 tablespoons maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 eggs
  • 1/4 cup grass fed butter
  • 1 cup coconut milk
  • 1/2 teaspoon vanilla extract
  • butter or coconut oil for baking

How to make Paleo American pancakes

 

Put all of the ingredients together in a bowl and mix with a handheld mixer until combined.
Heat up a skillet on medium heat and put some butter or coconut oil in it. Take 2 tablespoons of batter for each pancake and spread it out evenly until you have 3 inch circles.
Bake the pancakes until the top is set on the edges and carefully flip them to the other side. Bake until both sides are a nice golden brown.
Serve with some grass fed butter, fruit or maple syrup.
