This is the favorite soup of my boyfriend. He loves it when I’m making him this as a treat. Especially when he comes home late from work. I never was a big soup lover until I tasted something similar to this soup at a restaurant a few years back. I was sold. Homemade soups are so much better than store-bought ones. And this creamy spinach soup is after all those years still my absolute favorite!

The ingredients for creamy spinach soup
- 1 onion, finely chopped
- 1 crushed garlic clove
- 1/2 liter of chicken stock
- 450 grams of fresh spinach
- 150 grams of cream cheese
- 3 tablespoons of flour
- 1 tablespoon of olive oil
- salt and pepper
How to make creamy spinach soup
Put the olive oil in a pan suitable for soup and put it on medium heat. Add the onion and the garlic and cook until the onion is soft. Add the flour and stir. At a quarter of the chicken stock and let it cook while you are stirring. Add the rest of the stock and let it cook for about 5 minutes. Add the spinach to the mix and let it wilt. Let the soup cook again. Remove it from the fire and use a hand blender to make a smooth soup. Put the soup on the fire again and let the cream cheese melt into the soup. Season with salt and pepper.
